Great Recipe for sausage and peppers


Jesse and I have been to the Amish Farmers Market on two occasions and they sell sausage and pepper sandwiches that smell so good. Well the thought of eating such a fattening sandwich always turns me off, but I remembered this great recipe in my weight watchers cook book. Jesse doesn't go in today till 3pm so we'll be having this for lunch with homemade bread. Yum.


2 tsp olive oil

1 onion

1 red, green, and yellow bell pepper

2 garlic cloves

1 cup canned diced tomatoes

Salt and pepper to taste

1/2 pound kielbasa (I use the reduced fat kind)
2 cups penne

1/4 cup chopped basil

2 TBSP parsley


1. Heat oil and saute onions and peppers for about 10 mins. Add garlic, saute 2 mins.

2. Stir in tomatoes, salt, & pepper and simmer 15 mins

3. Add the sausage, cooked penne for about 20 more mins.

4. Add basil and parsley; toss to combine.

wow what a fancy lunch. But Christie you have always been a great cook. Yes Seconds please Jess! It looks great enough to fight you for it. And I will take seconds on bread also. What time is lunch and when should I be there. LOL

M- if we could have you here for lunch it would make my day. The lunch was only fancy because Jesse will go without dinner tonight. He will work from 3pm till midnight, or so, in the ER with no break for dinner. My poor guy. Although he has lost quite a bit of weight working this schedule and he is enjoying his trim figure.
T- it was quite good. Jack especially liked the "hot dogs".
