Cafe Rio Anyone?

I emailed these to MarySue but thought you all might enjoy. My neighbor made this dish the other night and it was soooo good! Enjoy!

Cafe Rio Dressing

3 tomatillos
1/2 juice of lime
1/2 cup buttermilk
1/2 cup mayo
1/2 cup sour cream
1 pkg. hidden valley ranch packet
1/2 to 1 bunch fresh cilantro (trim bunch of stalk)
5 green onions
1 clove fresh garlic
3/4 tsp salt
1 jalapeno pepper (include seeds for heat)
1 TBSP sugar

Directions:

Put all ingredients (except for mayo and sour cream) in blend and mix theoughly then chill. To maintain thickness don't put mayo and sour cream in blender, stir them in at the end.

Cafe Rio Pork

3 lbs pork tenderlion or roast ( do not trim fat)
1/3 cups water
1 tsp garlic salt
1/8 tsp pepper
1 tsp garlic salt
1 cup brown sugar
1 12 oz can of Coca Cola
2 tsp chili powder
1/4 cup flour (thickener)

Mix all ingredients in crock pot before pork is added. Add pork then set crock pot for 10 hours. At about 8 hours pull pork apart with fork, let continue to cook for 2 more hours.

Wow sounds nummy Christie. Thanks for sharing I will have to try this sometime. I think that it might be a little spicy for my kids, so I will have to make it sometime for Paul and I to have. 3
