Pioneer Woman's Oatmeal Crispies
This is for those of you who don't visit the Pioneer Woman's Blog (you should she is very funny)
1 stick butter
1 cup white and brown sugar
2 eggs
1tsp vanilla
1 1/2 cup flour
1 tsp salt & baking soda
1/2 cup very finely chopped nuts (I put mine in the blender)
3 cup oats
1. Beat first two ingredients
2. Add eggs and vanilla and beat
3. add flour, soda, salt and beat
4. stir in oats and nuts
5. I also added a half a bag of chocolate chips
6. Bake at 350 for 10 mins.

I don't know about you, but I think instant oatmeal works better than regular (I got that tip from Kate).
OK - so I just made these WITH chocolate chips and they're awesome! I totally agree that instant oats work better! I didn't have any so I put whole oats in the food processor!
The recipe does call for instant oaks! My mistake. I made mine with instant as well.
